Thank you for the interest. We are a small family winery that produces a very limited supply of estate grown Cabernet Sauvignon and we used the pan to make paella for an open house/ release party at our winery. It was a 2 day event with paella being served to about 400 people. Next to the wine the pan was the most talked about thing there. We often overheard comment like “that’s the biggest pan I have ever seen” and “did you see the size of that pan”. I made the paella on a custom made BBQ the one of the winery owners owns. I made a chicken and chorizo sausage recipe with no seafood and it paired very well with our wine.

We will be holding another open house on March 12th and 13th and will be serving paella again.

            The Taste of Spain went swimmingly. We raised $24,000+. We had over 32 different Spanish wines to taste and then I
            did up the Tapas table with Olives, Roasted Yellow and Red Peppers, Marinated Mushrooms, and Artichokes. Three kinds
            of very tasty Spanish Cheeses and Serrano Ham. Grilled Tuna on Olive Crostini, Bacon and Bread Stick with a Glaze 
            Spinach Balls with a Mustard Sauce, Beef Empanadas, and Garlic Shrimp. Caramelized Onion, Date, and Goat Cheese Tart
            Tortilla Espanola, Shrimp, Avocado, and Lime Salsa. Grilled Mini Rack of Lamb Chops with a Apricot and Roasted Serrano
            Chili Pepper dipping sauce. AND THE HIT OF THE EVENING YOUR PAELLA SERVED IN MY NEW 
            PAELLA PANS, WHICH HAD ARRIVED IN A TIMELY MANOR. My Diana cooked them perfectly, 
            following your directions. It was absolutely the perfect touch. Thank you.
            Now on to another subject. Do your know where I can get Manzanilla Olives. The kind they serve in the bars in Spain. 
            I hope you may tell me where to look.

Comment on wines for consuming with paella

                             I am very familiar with Vega Sicilia, is probably one of the best wines in the world without doubt. It is expensive but worth it. There are other wines like Protos, Campo Viejo, Vina Mayor, Pesquera, Alion, 5 Valbuena; This last two  are from the same manufaturer of Vega Sicilia with a fraction of price, try to buy years ' 94,' 95,' 96 on all of them and to be a Reserva or even better Gran Reserva. I think that the years ' 99, ' 001 are also good but we will have to wait and see.
                            There are many other brands, the trick is to select the Reserva and Gran reserva, the Rioja wines are typically drier, and the Ribera del Duero more fruit and aromatic.

Morning:
Just wanted to let you know how wonderful the paella pan worked out with our
"Wines of Spain" wine tasting which my wife and I hosted Saturday nite. We
used the paella recipe I printed off line from someone in Spain and it was
tremendous, but the pan got most of the comments. We could have used the
13" pan as we had tons of paella left over. We used arborio rice which
really cooked up well. Oh yeah, I guess the saffron packet you were planning
to send got lost in shipping. One side of the carton was torn and it probably
slid out thru the opening. Our experiment with saffron was a hot topic of the tasting.
We bought two small jars of saffron from Spain from a local store. I ruined the first jar while trying to toast it so it could be crushed into a powder. $5.99 down the drain. I was careful with the second jar and toasted it properly, then
crushed it to a powder using a liquor shot glass and the round end of a
wooden spoon because we didn't have a mortar and pistil. We learned a lot
about paella making, which is definitely a family affair. Other items we
served were three goat cheeses from Spain, Spanish artichokes, Spanish
olives (two different types), Spanish pork loin on tapas, two small cakes
from Spain (fig and date), from scratch Spanish artichoke/spinach dip which
got raves to say the least.
Oh well, enough of this. Thanks again for your great pan and the very fast
shipping. Some of our friends may be calling you for a pan some day, who
knows.

Thanks for the email. The Paella came out delicious on my 18" paella pan which I got from you. I figured that for the first time, things may not go to well, so I just had my daughters and son-in-laws over. That way, if I screwed it up, I wouldn't feel bad. But they all raved how good it was. I'm sorry I didn't have a camera to take a picture to send to you. I will for the next one. I already got the Paella bug and am already hinting to my wife how I probably should get one of the larger pans with the burner so we can have more people over to partake in it. That may take some doing.

The burner works great! I love the control-much better than setting the pan on the gas barbecue. Last night was not really a party-just another couple that we met while skiing in Utah. Turned out that they live only 5 mins from us, but we met in Utah. It gave me a chance to give the burner a test drive. Results were quite good. Now I think I have to decide on a bigger pan to actually use the outer ring on the burner. My present pan is 17" across the top. What would you suggest?

Diana-All my stuff arrived early today. We had plans for dinner guests tonight, so in honor of our new equipment, I changed the menu from pasta to seafood paella. I will let you know how it goes. The tripod and the gas ring are a lot more substantial than I was expecting. My 17 inch pan is actually too small for the outer ring of the burner so I will just light the inner ring to keep from burning myself. It looks like I am headed towards buying a bigger pan from you. Nice marketing job on your part! Now I have a built in excuse for having more people over for paella more often. As you know very well already, people just go nuts for it, and it's one of those things that never is as good in a restaurant as what you make at home.  Plus all the drama is big crowd pleaser. I'll send you my recipe for the seafood paella when I get around to writing it up. Also thanks for the extras in my order. Arroz negro cannot be far behind.

I just wanted to write a quick note to say that I love my Paella pan. It was a wonderful experience on cooking my first Paella de Diana.
Everyone was full of complements on the dish.  The only changes I made with your recipe was that I used homemade  chicken stock instead of the chicken bouillon, and I used red bell pepper instead of green, and as I told you I roasted my pepper instead of pimentos.
I also took your advice Diana and cooked it on my Bar-B-Q outside. I froze a little, but it was worth it.
It was a total pleasure meeting the both of you and again thank you for making my first experience with Paella a memorable one.
